Our dessert wines are picked late in the season with the maximum amount of hang time on the vine to produce concentrated rich flavors, fermented in open top fermenters and barrel.
We leave the exact amount of residual sugar to balance with the acids to create a delicious and memorable wine. We can only make these wines when the conditions are favorable, so they are not necessarily produced every vintage.
